Description

Rotisserie Chicken Salad is the perfect way to make something quick with a ready-made chicken from your local grocery store! 


Ingredients

Scale
  • 3 cups Shredded Rotisserie Chicken
  • 1/2 cup Jicama, diced
  • 1 stalk celery, diced
  • 1/3 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon minced garlic
  • 1 tablespoon parsley
  • 1 tablespoon dill 
  • 1 tablespoon chives 
  • Almond Slices (optional)
  • Grapes (optional)

Instructions

  1. Hand shred 3 cups of rotisserie chicken, using both light and dark meat or to your preference, skin on. 
  2. Chop jicama and celery
  3. Combine chicken, jicama and celery in bowl. 
  4. Add mayonnaise, mustard, and garlic, mix
  5. Sprinkle in seasoning and mix until well blended. 
  6. Optional – top with sliced grapes and almonds
