How to Make Lego Cake Pops

Makes approximately 22 Lego Cake Pops
Ingredients
For the Homemade Whipped Cream
  • 2 cups of heavy whipping cream
  • 1 tsp of vanilla
  • 2 TBSP of powdered sugar

Instructions
For the Quick Yellow Cake
  1. Preheat oven to 350 F degrees.
  2. Place all dry ingredients in a large mixing bowl.
  3. Then add shortening, milk, and vanilla.
  4. Mix on low speed, while scraping the sides as needed.
  5. Next add eggs and mix well, (1-2 minutes).
  6. Place cake batter into a greased and floured 9 x 13 pan.
  7. Cook for about 30 minutes, or until a toothpick placed into the center of the cake comes out clean.
For the Homemade Whipped Cream
  1. Icing is commonly used for the binding process of the mixture, but I use homemade whipped cream and it does not disappoint!
  2. Chill your mixing bowl and beaters (or whisk attachment) in the freezer for about 10 minutes.
  3. Add whipping cream to the chilled bowl and mix until stiff peaks are just about to form.
  4. Then beat in vanilla and sugar until peaks form.
How to Make the Lego Cake Pops
  1. Once your cake is finished baking and completely cooled, crumble it into a large mixing bowl.
  2. Then add about 3 cups of fresh whipped cream to the cake crumble and mix with a wooden spoon until you have a dough-like consistency.
  3. Next, form Lego heads from the mixture and place each one on a parchment lined baking sheet. My mixture yielded about 22 Lego heads, but your yield may vary depending on the size of pops you are making. Each one will have its own uniqueness.
  4. Pour one package of Wilton's yellow candy melts into a double broiler (or a homemade one). Now here comes the secret - add 2 to 3 TBSP of refined coconut oil to the melts. The oil helps to create a wonderful, smooth texture that allows the melts to evenly coat the cake pops. Apply medium to low heat to the broiler while stirring constantly until the candy melts.
  5. One at a time, dip the tip of a cake pop stick into the melted candy melts and then insert the dipped end of the stick into a Lego head. Do not dip the Lego head into the candy melts just yet! Place the heads in the fridge for about 15 minutes in order to secure the sticks to the heads.
  6. Now you are ready to dip those cake pops!
  7. Dip and twirl to coat.
  8. Then place a yellow M&M on top of each Lego head.
  9. Place the cake pop in a cake pop holder and repeat this process for the rest! I used a block Styrofoam that I wrapped in birthday wrapping paper as my cake pop holder :)
  10. Once your cake pops are hardened, they are ready for faces! Toothpicks and black & red decorating gel work great!

Notes
Tips on making Lego faces- Practice your desired Lego faces on paper first. Then place a small amount of decorating gel on a plate, dip a toothpick into the gel, and then gently create Lego faces. You just have to work with the gel, but it doesn't take long to get the hang of it. Practice on a few cake pops before conquering all of them. If you mess up, no worries, just eat it (just kidding). Take a water dampened Q-tip and gently rub off the gel and wait for it to dry until you try again.
