Hi everyone! Today I am sharing a delightful recipe for Grilled Ranch Chicken Skewers using Hidden Valley Organic Ranch. Hidden Valley Ranch is a dressing my mother always had in our pantry and now the dressing I loved as a child comes in a wonderful organic option. I was so thrilled to find this dressing at my local grocery store because this ranch dressing allows this recipe to come together quick and easy. These Grilled Ranch Chicken Skewers are sure to please all your family and guest at your next outdoor gathering. I know you are ready for the recipe, so let’s get grilling.
First soak 8-10 skewers for at least 15 minutes. Then slice four boneless, skinless chicken breast. In a medium size bowl add the sliced chicken breast, 1/2 cup of Hidden Valley Organic Ranch, 2 TBPS extra virgin olive oil, 1 TBSP of fresh parsley finely chopped, 1 TBPS of fresh chives finely chopped, and salt and pepper to taste. Let all those flavors marinade while you are preheating the grill. Now you are ready to put the chicken on the soaked skewers. Add 2- 3 slices of chicken on each skewer. Don’t forget to oil your grates before placing your skewers on to cook. Cook on medium to medium high heat until the internal temperature of the chicken reaches 165 degrees ( about 20 minutes). Adjust temperature as needed and turn chicken occasionally to evenly brown both sides.
I don’t know if you noticed, but in the left hand corner of the grill, I am grilling turkey bacon. Did you know you could grill bacon? It is really easy and compliments this meal very well. Place foil on the opposite side of the grill. Add the bacon and cook until crispy, turning occasionally. Once bacon is done chop into fine bits and sprinkle over a fresh garden salad loaded with lots of colorful vegetables!
