Hi everyone! I am so excited to share a wonderful recipe that I found out of this month’s All You Magazine! When I was shopping in Dollar General Store this last week I walked passed the Magazine rack and my eye caught the caption: 127 Recipes, Projects & Fun Ideas! I am all for new recipes, so I quickly picked up an All You Magazine and thumbed through all the amazing recipe suggestions. This recipe for Curried Avocado and Yogurt Dip quickly captured my attention and this is the recipe I made for you today. I know you are ready for the recipe so let’s get dipping!
Curried Avocado and Yogurt Dip
Doesn’t this Curried Avocado and Yogurt Dip look tasty? Well, believe me it is! All the flavors come together quite well and provide a fresh compliment to yummy crisp vegetables.
First, you want to start with all these wonderful, fresh ingredients that include: olive oil, onion, curry powder, plain Greek Yogurt, avocado, fresh lemon juice, and salt & pepper.
In a small saute pan heat olive oil. Add onions and saute for about 1 minute, then add curry powder and saute for about 30 longer. Set aside to cool. Then place all the ingredients in a food processor or high rpm blender and combine all ingredients until nice and creamy!
Now you are ready to serve this unique and delicious dip with all your favorite, colorful vegetables. I chose to serve my dip with an array of vibrant vegetables that include: Sunburst tomatoes, purple radicchio, pickling cucumbers, petite sweet carrots, radishes, and red bell pepper slices.
The original recipe is stated below, but I noted my personal changes in the Notes.

Curried Avocado and Yogurt Dip w/ All You Magazine
Ingredients
- 1 tsp olive oil
- 2 TBSP grated onion
- 1 tsp curry
- 1 1/2 cup plain Greek yogurt
- 1 medium avocado, pitted, peeled, and diced
- 1 TBSP lemon juice
- salt and pepper
- assorted crudites, for serving
Instructions
- Warm oil in a small skillet over medium heat.
- Cook onion, stirring, until just tender, about 1 minute.
- Stir in curry powder and saute for 30 seconds.
- Transfer to a small bowl and let cool.
- In a food processor combine yogurt and lemon juice.
- Add onion mixture and process until smooth and creamy
- Season with salt and pepper. Cover and refrigerate for at least 2 hours before serving.
- Serve cold with assorted crudites.
Notes
I used 1 whole, large avocado. I increased the olive oil to 1 TBSP. Additionally, I used a half of a jalapeno, minced, along with the onion mixture. I did not saute the minced onion and jalapeno, instead I used them in raw form. I also increased the lemon juice to 2 TBSP and added 1/2 tsp kosher salt and 1/4 tsp + 1/8 tsp of ground pepper.

Yogurt and Avocado can make a tasty and healthy combination. Avocado is a healthy source and Yougurt is also a good source of protein and calcium.
