Summer is here. My son is out of school and I’m 35 weeks pregnant and trying to move into a new house. Life is busy! When we as mom’s are running around like crazy people, it isn’t unheard of that we are looking for quick and easy meals and/or side dishes. Whatever gets the kids fed the fastest sometimes! One of my family’s favorite go to side dishes is Velveeta Shells and Cheese.
I always love to have the hubs grill when I am in a hurry because well.. that means he makes the meat and I just whip up a few side dishes! So one of our favorite meals in the summer is grilled chicken, Velveeta Shells and Cheese, and a yummy steamed vegetable (usually green beans or broccoli and carrots). Obviously the kids LOVE the shells and cheese, I mean really… who doesn’t? But sometimes we as adults like something with a little flare! So I always half our macaronni and mix in some rotel tomatoes.
This is a great way to keep the kids happy while the adults get a little something extra the kids normally wouldn’t eat (since it’s a little spicy).
So you want to know how to make this cheesy goodness? It’s super easy!
The How-To: Velveeta Shells and Cheese
1. Make your Shells and Cheese According to the package instructions.
2. Open and drain you can of Rotel Tomatoes.
3. Pour in the amount of Rotel you want in your Shells and Cheese.
4. Stir and serve.
