Easter is hopping up on us and I have an adorable, yet delicious recipe for Easter Cucumber Sandwiches with a Carrot and Herb Cream Cheese Spread that I know you and your family are going to love. My family truly adores this recipe, and I am so excited for you to try these cute little Easter Cucumber Sandwiches for yourself! They are super easy and come together quite fast. I know you are ready for the recipe, so let’s get cooking!
Easter Cucumber Sandwiches
With a bunny and Easter egg cookie cutter, cut an equal amount of bread for each sandwich and set aside. Save all your extra bread pieces because tomorrow I will be back with a recipe that uses all of the extra bread. In a medium sized bowl add cream cheese, shredded carrots, fresh chopped chives, fresh chopped parsley, and seasonings. Combine all ingredients and mix well. Cut an English cucumber in half and slice thin slices of your desired amount of cucumbers. Spread the carrot and herb cream cheese on both sides of a sandwich. When spreading the carrot and herb cream cheese on the bunnies don’t forget to do the mirror side of the bunny, just speaking from experience :) Place your desired amount of cucumber slices on each sandwich and top with the other the matching bread cut out.

Thank you, Maggie! So glad you stopped by :)
These have spring written all over them! So fresh and sweet :) Just lovely.
Thanks, Valerie! Wishing you a wonderful weekend :)
I think it would be easier and the filling covering the whole sandwich if the mixture was spread on the bread before cutting…just saying :)

These are adorable! My daughter is in middle school. I wonder if I made these for her lunch if her friends would laugh. Oh man! I think I’m going to do it anyway! ;)

I love cucumber tea sandwiches! These look so cute, and perfect for Easter. Pinning for later!
Love these but one question, can they be made ahead, like the day before or do they get soggy?
did you try making them ahead? I was wondering the same!
No, I haven’t but might have to try! If I can’t make ahead will not have time on Sunday! But I also don’t want them soggy
me encantan!!! Tendre el cumpleaños de mi Bebé y esta idea es genial para mis pequeños invitados!!! ;)

Not sure if you still check your comments, but what was the recipe you posted the next day using all the leftover bread bits? I can’t seem to find a link.
Sandwiches lasted less than 5 minutes at our party. Delicious!
What a great twist on the classic sandwich! My cucumber sandwich loving daughter will LOVE these!!! Thanks for the great idea! Blessings, Loni
They are so fun for kids!
Super cute idea. These would be great to serve around Easter or just Spring time. I am happy to feature these cute bunnies at Love Your Creativity.

So sweet! I hosted a Mad Tea Party and originally planned to cut the 7 types of tea sandwiches each into different shapes. Your bunny would have been perfect for the White Rabbit. But, alas, I just didn’t have the time. Cucumber is probably my favorite, and they goes great with sliced salmon too — I used both in a unique sandwich cake which I am thinking of making for an Easter brunch. Pinned!
These sound awesome, I LOVE cucumber sandwiches! Printed and want to pin, but don’t see Pin button??
