Today I am bringing you yet another Pumpkin flavored recipe. Have you had enough yet? : ) My sister and I obviously have not! You will love this one though. It will leave your tongue asking for more pumpkin! I have to say, this all started from my love of coffee. I start everyday off with coffee and a phone conversation with either my mom or my sister. Living away from them has definitely been hard. I was so used to them stopping by randomly. But after a year and a half, we still have our morning cup together!
Pumpkin Spice Mug Cake
I made this because I first wanted to try out the Pumpkin Spice Creamer from Nestle. Why you ask? Because I LOVE pumpkin…. just in case that wasn’t mentioned before ; ). I brought it home and immediately made some. I also grabbed some instant decaf coffee, because with our recent snow flurries I find myself wanting coffee more than just in the morning.
So while I was drinking my random cup of coffee with my new Pumpkin Spice Creamer, I had a brilliant idea. A mug cake. Ok, it’s been done before I know, but in that moment it was a brilliant idea to my mouth! The first thing I did? Called my sister because not only does she love to cook, we share a slightly creepy obsession with pumpkin flavored anything! You wanna know how I made it right? Ok, let’s do it!

- Total Time: 7 mins
- Yield: 1 1x
Ingredients
- 5 Tablespoons All Purpose Flour
- 4 Tablespoons Sugar (optional)
- 1/8 Teaspoon Baking Powder
- 1/4 Teaspoon Pumpkin Spice Seasoning
- 1 Egg
- 4 Tablespoons Nestle Pumpkin Spice Coffee Creamer (I used sugar free)
- 2 Tablespoons Oil
Instructions
- Combine all ingredients in a mug
- Whisk with a fork until mixed well
- Microwave for 1.5 minutes
- If it’s not done, microwave in 15 second intervals until done.
Notes
The cake in the mug comes out moist, but thickens as it cools, don’t over cook it. Do not leave microwave unattended while cooking to ensure it does not overflow. An ex large mug is recommended. The sugar is optional. If you have a creamer that is not sugar free, sugar is not necessary. Enjoy!

Coffee is a huge part of my family. We pretty much all drink it on a daily basis. My husband and I probably wouldn’t make it out the door in the mornings without it. However, one of my favorite things about coffee is the conversation you can have over a cup. There is just something relaxing about coffee in the morning. So grab a cup and have a great conversation with someone you love! It’s a wonderful way to start the day : ) I rhyme, hehe!

I tried your recipe this morning, but instead of pumpkin pie creamer I used Hazelnut! Very good recipe, though I really want to try the pumpkin pie creamer! I know what will be on my next grocery store list ;)
