I have a confession…I am totally addicted to watermelon! It is absolutely my favorite summertime treat. Please tell me I am not the only one in awe of the delicious melon. To illustrate my love for watermelon, today I have created a tasty Watermelon Agave Snowball recipe for you to try. It is super easy and so refreshing on a hot, hot summer day. I have to emphasize hot because I live in Houston, Texas and I will be honest, sometimes it feels like you are standing on the surface of the sun! I know you are ready for the recipe, so let’s get stared!
Here in Texas we take our snowballs serious, when it is hot not only are we looking for ways to cool down, but we are always searching for that awe moment. For example, did you know there is a difference between snowballs and snow cones? Snowballs are made with fresh, fine snow that is shaved with a ice block shaver. The ice is never crunchy, rather it is soft as snow. Where as, snow cones are made from a snow cone machines that crushes ice cubes into small pellets, leaving the ice crunchy. This recipe I am sharing with you today is very similar to a snowball texture and this is why I am a huge fan of this recipe.
First, puree 8 cups of cubed, seedless watermelon and 1/4 cup of agave nectar. In the sink open a gallon size freezer baggie and pour in the watermelon mixture. Close the baggie and make sure the baggie does not leak before placing it in the freezer. Lay the baggie flat in the freezer and let it freeze for 4-6 hours or until a soft snow consistency is formed. You may also leave this mixture in the freezer for days.
If you leave your watermelon mixture in the freezer over night, place the baggie under a plate and leave it out on the kitchen counter to thaw until you can break up the watermelon with your hands or with the back of a spoon. Serve with a festive straw and spoon. Enjoy!

Notes
If you like a little salt with your watermelon add 1/4 tsp of kosher salt to the pureed watermelon for a salted watermelon agave snowball.

Omgoodness, Valerie ;) Are there no snowballs in California?? We have to send you one! If you ever see one you have to try it, but unfortunately not all snowball stands are equal. The are really famous in New Orleans. We go to a local snoball stand here that actually make their own syrups!

The school I work at starts back next week. I like tp treat the children from time to time if budget friendly. This I will have to try while there are still fresh watermelon at the farmers market.
